Our Story

Rooted in Chicago, Driven by Craft

Daboba was born from a simple conviction: the best food doesn't need a long menu — it needs honest ingredients, patience, and a willingness to do things the way that actually works. We opened our doors on South Archer Avenue with a wood-fired oven, a well-stocked pantry, and a refusal to cut corners.

Every morning, our bakers arrive before dawn. Sourdough ferments for 16 hours. Croissants are laminated by hand, not by shortcut. The produce in our grocery section is selected the way you'd want someone to select it for you — with care, with knowledge, and with the understanding that what you eat matters.

Two Disciplines. One Standard.

We run a bakery and a grocery with the same philosophy: if it doesn't deserve a place on your table, it doesn't deserve a place on our shelf.

Country loaves, ciabatta, focaccia, and our 16-hour sourdough — all baked in our wood-fired oven. We use stone-ground flour, natural starters, and enough time for the dough to develop flavor the way nature intended.

Source with Intention

We work with millers who stone-grind their flour and farmers who treat their soil like a living thing. Ingredient quality isn't a marketing line — it's the first decision we make, before the oven is even turned on.

Ferment with Patience

Our sourdough ferments for 16 hours. That's not a gimmick — it's chemistry. Long fermentation breaks down gluten, develops complex flavor, and produces a crumb structure you can't rush. We don't rush.

Bake with Conviction

Our wood-fired oven reaches temperatures that conventional ovens can't match. The result: a crust that shatters, a crumb that sings, and a loaf that tastes like it was made by someone who actually cares.

Share Without Apology

Every loaf that leaves our bakery has earned its place. Every jar on our grocery shelf has passed our standard. We'd rather sell less and sell right than fill shelves with compromise.
